Beet + Mint Salad Recipe

BEET IT (add music notes)

When it comes to beets, simplicity is key. They pack so much flavor on their own so keep. it. minimal. Add a little brightness and crunch to your dish and you are set.

Ingredients:

2 medium sized beets

1 T of avocado oil

1 T of white wine vinegar

Salt & pepper

A few sprigs of mint

Handful of crushed sprouted almonds

Directions:

  1. De-skin and slice beets into thin cuts

  2. Add to small pan

  3. Drizzle with avocado oil, salt and pepper

  4. Roast under 350 degrees for 7-10 minutes

  5. Plate them, top with fresh mint + chopped almonds (walnuts and pistachios are also great)

  6. Finish with a drizzle of a white wine vinegar
